  • Another "hot night" calls for "hot dogs," accompanied by some Mac n Cheese, dill pickles, and fresh peaches and pears from the local farmers market. Teresa balanced this meal with something simple, cheesy, sweet, and sour. Utilize your time in the kitchen with the old saying "less is more," and turn it into something tasty!   • It's nice to have a cool and refreshing dinner on these hot summer days. Teresa has beaten the heat by slow roasting some pork on the grill, and turning it into a delectable, bbq, pulled pork sandwich. Who doesn't love a good sandwich? She kept it light and refreshing by tossing up a fresh mixed of cucumbers, carrots, tomatoes, cantaloupe, and vanilla yogurt for dessert. This may seem like a variety, but it sure made a nice, and balanced meal for the whole family. Make this dinner idea yours tonight!

  • Don't you just love it when you can make another dish with leftovers? When I make spaghetti, there's always that extra batch of spaghetti noodles leftover, so what do I do with it?

    For tonight's balanced dinner idea, Teresa answered my question by making up a dish called Spa-Sagna. It's quite clever, and it is basically using that extra batch of spaghetti noodles to replicate a lasagna dish. She layered the noodles with red tomato sauce and ricotta cheese, tosses it in the oven, and is ready to serve within 30 minutes. While it's sizzling at 350 degrees, Teresa steamed up some summer veggies, and topped it off with sprinkles on fresh strawberries. She also sneaked a couple of Hello Koala cookies for an extra sweet treat. I think I want to go over to Teresa's house for dinner tonight.

  • I remember when growing up, there are certain nights where we will have a family favorite dish. My mom would cook more than enough to go around the table, and it was always satisfying.

    Just like Teresa's balanced meal tonight-it's spaghetti night! The #1 favorite of the family, she simply tossed this dish up with red tomato sauce, and ground beef. She added peach halves and yogurt with sprinkles. But something new on the side, too, wilted, fresh spinach in olive oil. Knowing the kiddos weren't a big fan of that mushy green stuff, they chow down with no complaints. In the end, Teresa conquered all with her dinner idea tonight, leaving no crumbs behind.

  • Since this weather has been quite hot, but cool at night, Teresa's balanced meal idea for the family tonight is BBQ. The main course is London broil steak, seared on the grill until medium well, or well done for the kiddos. The sides consists of steamed rice in a triangle mold, and steamed broccoli and cauliflower with cute, animal food picks. As the family enjoyed this effortless dinner, Teresa couldn't forget dessert! The family ended on a fresh and sweet note with strawberries topped with sprinkles. What a mouthwatering dinner idea.
